Hello friends! It’s been about a week since I updated you on my quest to quit refined sugar and white flour. The massive cookup that took place last Sunday may have destroyed me, but it has most certainly made the past week of my life much more manageable. In fact, it probably saved my sanity. I had a few long days in the office last week so it was so wonderful to come in from work knowing that dinner was practically ready. Let’s face it, at 8pm, the last thing I wanted to do was think about cooking and thankfully, I didn’t have to!
Having lunches ready to go has also kept me happy in work. Not having to resort to the canteen has made my midday eating so much more pleasurable.
As I mentioned last week, I made so much food that dinner is good to go for most of this week also. I cooked up and froze a tonne of rice last night and have just one or two other bits and pieces to do for this week but nothing too fear inducing.
My sourdough starter is still sitting in the kitchen waiting for me to ‘start’ but I haven’t been able to bring myself to take the bread making plunge with it just yet. The mayo was devoured and I’ll probably find myself making another batch on Saturday or Sunday. I have noticed however that it makes me want to make chips to accompany it so I should probably not go too overboard!
Otherwise all good. Am enjoying eating and cooking again (see pics below). Skin is so-so and weight is stagnant! Still eagerly awaiting the glow!
